Halogen Oven Baked Potatoes

 2 tsp olive oil
 4 large-sized baking potatoes
 ¾ cup sour cream
 ½ cup freshly grated cheddar cheese
 Bacon, chopped and crisped
 Spring onions, thinly sliced
 (optional) Parsley, for garnish

Wash your potatoes thoroughly and prick them a couple of times. Then, place them on the rack of your halogen oven. If you have different sized racks, use the shortest or bottom-most rack.

Set the temperature at 390°F and bake for 40 minutes.

Cut a cross on top of each potato, squeezing the sides. Add a spoonful of sour cream.

Top with cheddar cheese, crispy bacon, and spring onions and parsley for the best taste. Enjoy!
